Opened in July 2021, Delta is the result of an initiative and grant provided by the Stavros Niarchos Foundation (SNF), aligning with the high standards set by the SNFCC. The restaurant not only satisfies culinary cravings but also complements SNF’s vision of creating a cultural institution that promotes environmental sustainability in design, construction, operation, and overall impact.

Delta takes pride in its commitment to sustainability and raising public awareness about responsible food practices. Following a “nothing lost – nothing wasted” philosophy, the restaurant respects natural resources and works closely with small-scale producers from all over Greece. These collaborations ensure the use of authentic, original, and organic ingredients, giving guests a unique and eco-conscious dining experience. Additionally, Delta hosts educational programs, activities, and workshops to promote sustainability, sustainable development, and responsible management of natural resources. Wine and food tasting seminars are also available for guests to expand their culinary knowledge.

At the helm of Delta’s culinary excellence are Head Chefs Thanos Feskos and George Papazacharias, both accomplished in the world of gastronomy. Thanos, previously Assistant Head Chef at the Michelin 3-star restaurant Geranium in Denmark, combines his love for Greek cuisine with a deep understanding of the local, farm-to-table approach. George, who leads an R&D team, brings his expertise from his experience at the Michelin 3-star restaurant Maaemo in Oslo and Under in Norway. Together, they create a menu that tells a story through each of its 12 courses. Their innovative approach combines minimalistic perfection, local raw materials, and pioneering techniques like fermentation and Scandinavian preservation to challenge guests’ perceptions of taste.

The gastronomic journey at Delta is carefully orchestrated by Restaurant Manager Jana Cechova, drawing from her previous experience at Michelin restaurants. Her expertise ensures that each dish and flavor is part of a larger narrative, embodying Delta’s philosophy of gastronomy, sustainability, and culture.

Accompanying the delectable menu is an extensive wine selection, offering guests an extraordinary journey through international varieties. With hundreds of labels covering the spectrum of the wine universe, Delta presents the best of the Greek vineyard and exclusive imports. Award-winning sommelier Tilemachos Papandreas curates the wine list, ensuring the perfect pairing for each course, enhancing the overall dining experience.

Delta’s design, led by the renowned Kois Associated Architects, reflects modern Greek culture while harmonizing with the SNFCC’s vision by architect Renzo Piano. The architectural narrative embraces Greekness through contemporary art, music, and gastronomy. It creates a sense of familiarity, mystery, and hospitality that resonates with visitors.

Recognized for its exceptional design, Delta received the 2022 Restaurant & Bar Design Award in the Europe – In Another Space category. This prestigious accolade celebrates the quality of hospitality and highlights the restaurant’s outstanding design and architecture.

To further enrich the dining experience, Delta collaborates with ARTWORKS, presenting works from Greek artists in the restaurant’s venue. This collaboration promotes contemporary art and explores the connections between nature, digital environments, knowledge, emotion, corporeality, architecture, and landscape.
